How should the pan be used in everyday situations?
To avoid overheating, please note the following:
Always add suitable fat or oil to a cold pan and then turn on the stove. Heat the pan gradually. Reduce the heat before smoke starts to appear, then add the food.
Especially with induction cooktops, gradual heating is important so that the heat has time to distribute evenly throughout the pan and thus ensure that the base expands uniformly.
Always make sure that the cooktop element is not significantly smaller than the base of the pan.
Tip: Use a thin metal spatula or grill scraper.
Which fat or oil is suitable for frying?
Generally, no fat or oil should begin to smoke when heated.
- Olive oil is generally unsuitable for frying, as it begins to smoke even at low temperatures.
- Butter: Heat resistance 150-160°C
- Margarine: Heat resistance 150-170°C
Ghee: Heat resistance 190-210°C
Vegetable oils: Heat resistance 190-220°C
... Tip: You can tell if the temperature is high enough for searing by using the wooden spoon trick. Place a wooden spoon or similar utensil in the fat or oil. If bubbles form around the wood, the temperature is right.
Can my forged Holstein pan go in the dishwasher?
Under no circumstances should you clean the pan in the dishwasher, as this will destroy the pan's natural coating and lead to corrosion. Simply clean the pan with a kitchen towel after use. Then, rub the pan with oil as needed. Olive oil is particularly suitable for this.
Minimal warping of the pan base can never be completely ruled out, especially with glass-ceramic cooktops, which are always flat and expansion-neutral. This does not significantly impair its usability.
